To be honest, I’ve never made meat loaf. So when I saw this recipe, I figured why not give it a shot! I know it’s a little different than most meat loafs, but it was still amazingly delicious. My fiancé LOVED it, however, meat and potatoes is always a quick way to a man’s heart 😉
INGREDIENTS
- 1/3 cup chopped green onions
- 3 tablespoons dry breadcrumbs
- 2 teaspoons minced garlic
- 1/8 teaspoon salt
- 1/2 teaspoon dry mustard
- 1/4 teaspoon freshly ground black pepper
- 1/4 teaspoon crushed red pepper
- 1 pound ground sirloin
- 1 large egg, lightly beaten
- 6 tablespoons ketchup, divided
- Cooking spray
PREPARATION
STEP 1: Preheat oven to 400° Fahrenheit and prepare broiler pan coated with cooking spray.
STEP 2: Chop 2-3 onions to yield about 1/3 cup. Add to medium-large bowl.
STEP 3: Combine dry ingredients. Add to medium-large bowl.
STEP 3.3: Pour glass of Merlot
STEP 4: Lightly beat 1 large egg. Add to medium-large bowl.
STEP 5: Mix 1 pound of beef into the mixture with hands until just combined.
STEP 6: Mix in 1/4 cup ketchup.
STEP 7: Shape beef mixture into 9×4-inch loaf and place on prepared broiler pan.
STEP 8: Bake at 400° for 20 minutes. Brush top of meat loaf with remaining 2 Tablespoons ketchup (or drizzle like I did).
STEP 9: Bake 7 additional minutes or until done.
STEP 10: Slice loaf into 8 equal pieces. Serve with mashed potatoes and steamed vegetables.
