Pi Day Brownie Pie

I’m not a big pie fan, but wanted to partake in making a pie for Pi Day (3.14). I decided to make a brownie pie instead!

You can make this with the store-bought pie crusts or make your own and then fill it with your favorite brownie mix! It’s much better than I was expecting and would DEFINITELY make these again. They are the most fun to eat out of ramekin bowls, especially with the perfect space to add a scoop of ice cream on top 😉

INGREDIENTS

CRUST:

  • 1/4 cup (or 4 Tablespoons) butter
  • 10 graham crackers
  • 1/4 cup granulated sugar

BROWNIES:

  • 1 pack of your favorite brownie mix (I used the Ghirardelli mix from Costco)
  • 1/3 cup water
  • 1/3 cup vegetable oil or canola oil
  • 1 egg

PREPARATION

STEP 0: Preheat oven to 350˚F.

STEP 1: In a small saucepan or in the microwave, melt butter.

STEP 2: Place about 10 graham crackers in a plastic bag. Roll with a rolling pin until finely crushed. Another option would be to add them in small batches to a food processor for fine crumbs.

STEP 3: Add graham cracker crumbs and sugar to a medium bowl. Add melted butter. Stir or blend the ingredients together with your hands.

STEP 5: Press the crumb mixture into the pie dish.

STEP 6: Bake for 10 minutes at 350˚F.

STEP 7: While crust is baking, mix together your favorite brownie mix according to the instructions on the box. I’ll walk through my Ghirardelli mix just for fun. In a medium dish, scramble 1 egg. Then add water and the oil. Stir until well mixed.

STEP 8: Add in dry brownie mix and stir until well blended.

STEP 9: Remove pie crust from oven. Reset oven temperature to 325˚F.

STEP 10: Add brownie mixture on top of pie crust. I had a little extra, so I added it to little soufflé dishes for personal desserts.

Step 11: Bake for 40 minutes (or the time noted on your brownie mix). For the Ghirardelli brownies, the center ends up staying soft and gooey even after the allotted bake time. Do not bake this any longer otherwise the edges will burn and the insides will boil! It’s an interesting mix, but tastes so amazing 🙂

STEP 12: Let cool and serve with a large scoop of vanilla or mint chocolate chip ice cream.
