I wanted to make something a little special for David tonight. I grabbed my Dutch oven, a bag of cranberries, and some bell peppers for this delicious recipe I found while browsing around on Pinterest. It sounds like it was an experiment to begin with, so I continued her improvisation and made it my own!
- Olive oil
- 2 chicken breast
- 1/2 large onion, chopped
- 2 garlic cloves, minced
- 4-6 mini bell peppers (or 1 large bell pepper), chopped
- 1 cup fresh cranberries
- 1/8 cup water
- 1/4 cup honey
- 1/2 Tablespoon salt
- 1/4 teaspoon pepper
STEP 1: Preheat oven to 325 degrees fahrenheit. Heat dutch oven over medium heat. Add enough oil to cover the bottom.
STEP 2: When oil is hot, set chicken breast in pan and let brown for a minute, then turn and brown the other side.
STEP 3: While chicken is browning, chop onion, bell peppers, and garlic.
STEP 4: When chicken is browned on both sides, remove and set aside. In hot dutch oven, add chopped onions and peppers. Let them cook until soft.
STEP 5: In a small bowl, stir together honey, water, salt and pepper until smooth.
STEP 6: Add cranberries to the dutch oven. Drizzle honey mixture over vegetables and stir a few times until the cranberries start to pop.
STEP 7: Put roast back in the pot and move the veggie/cranberry mixture around it.
STEP 8: Cover with lid and bake at 325 degrees for 1 hour.
David and I loved this! With such amazing ingredients – honey, bell peppers, garlic, cranberries… I guess I couldn’t expect anything different! The original recipe called for a beef roast, but I think I actually prefer the chicken since it soaks up all the flavors so well and also cooks in half the time! This is an amazing meal in itself, and very filling. Personally, I’d recommend 2-3 chicken breast for a family of four with a nice side. Overall, I found this recipe to be simple, budget-friendly, and quick for such a rich meal.
