Baked Sweet and Sour Chicken

I stopped by Home Goods today and found a super cute baking dish for only $7! It’s not entirely perfect, but it’s a gorgeous blue, which I love and plan to build my kitchen collection off of in the future. I wanted to use my new baking dish for my chicken dinner tonight, so I went for this sweet and sour chicken recipe.

INGREDIENTS (for Chicken)

  • 2-4 boneless skinless chicken breasts, cut into chunks
  • salt & pepper to taste
  • 1 cup cornstarch
  • 2 eggs, slightly beaten
  • vegetable oil for frying (about 1/4 cup depending on pan size)

INGREDIENTS (for Sauce)

  • 3/4 cup sugar
  • 4 tablespoons ketchup
  • 1/2 cup rice vinegar
  • 1 tablespoon soy sauce
  • 1 teaspoon garlic powder

PREPARATION

STEP 1: Preheat oven to 325 degrees.
STEP 2: Heat oil to 350-360 degrees. In a large bowl, season chicken with salt & pepper. Toss chicken pieces in cornstarch and then coat in eggs.

STEP 3: Drop chicken pieces into hot oil and cook until golden brown.

STEP 4: Place in single layer in 9×13 pan.

STEP5: Whisk together ingredients for sauce (sugar, ketchup, vinegar, soy sauce, and garlic powder) in a small bowl and pour evenly over chicken.

STEP 6: Bake for 1 hour, turning chicken every 15 minutes. The sauce will thicken as it cooks.

STEP 7: In the last 15 minutes, start the white rice. Serve under chicken.

Overall, it was excellent! My fiancé had to go back for seconds, so I’d say that’s a good sign. I think I over-mixed it by flipping it too much while frying and lost a lot of the corn starch, but it was still an excellent and easy-to-make recipe. Definitely something to keep for the recipe book.
