Tonight was a busy night, so I needed to get something done quick, but wanted to still keep it tasty and healthy. I had a freshly opened can of Italian Panko bread crumbs, eggs on the edge of going bad, and green beans and cilantro about to go… so I decided to make breaded chicken with a side of rice and green beans. This is a super quick, reasonable, and delicious meal from yours-truly.
- 1 1/2 cup Panko bread crumbs
- 2 eggs
- 2 chicken breast
SIDE (rice & green beans)
- 1 cup white rice
- 1 tbsp finely chopped cilantro
- Handful of raw green beans
- 1 tbsp butter
- Pinch of garlic salt
STEP 1: Preheat oven to 325°F
STEP 2: You can do this part two ways – keep as full chicken breast, or slice in half. I decided to slice these so they would cook in half the time. Cut each piece in half, then slice each half down the center horizontally so you have 8 thin pieces of chicken. Pound each piece so they are even.
STEP 3: Crack eggs in a bowl and scramble with fork. In a separate bowl, add bread crumbs. Prep a 13″ x 9″ baking dish – you don’t need any oil or button in the bottom of the pan. Keep close by for this next part.
STEP 4: Take each piece of chicken and submerge in egg. Remove and let drip a little over the bowl for a couple seconds, then coat in the bread crumbs. After coated, lay flat in baking dish. Continue until all pieces of chicken are coated.
STEP 5: Bake thin-cut chicken for 30 min for juicy, tender meat and a crispy breading. If you left the chicken thick, bake for 50 min to 1 hour – or until the breading is lightly browned like in the image below.
STEP 6: While chicken is baking, finely slice cilantro and steam white rice. While the rice is cooking, boil green beans for 12 minutes. Drain green beans, placing them back into the hot dish. Add butter and pinch of garlic salt for flavor. Keep these warm until chicken is done.
My fiancé loved this! I typically throw the full chicken breast in, but by cutting it thin and giving it a few WHACKS, it turned out amazingly juicy and delicious with the perfect amount of crunch. The sides also complemented it perfectly, but you could try some of the following:
- Mashed potatoes
- Grilled asparagus
- Steamed vegetables
- Wild rice
- Bow-tie pasta (or any noodles)
